Asian Chicken Lettuce Wraps are a healthy, gluten-free, and low-carb lunch or dinner. This easy recipe is made with an entire rotisserie chicken and a good-for-you peanut butter sauce that will make you want to lick your plate!
Place all ingredients from soy sauce to garlic powder together in a large bowl and whisk until well mixed. Add shredded chicken and diced bell pepper. Toss to coat.
Serve chicken mixture in a lettuce wrap and top with peanuts and green onions to serve. Feel free to serve it warm or cold depending on your taste preferences.
Store chicken and lettuce separately between servings.

Meal Prep and Storage
To Prep Ahead: You can shred the chicken or make the sauce up to 1 to 2 days ahead of time.
To Store: It is essential that you keep the ingredients separate. If you are packing these peanut Asian chicken lettuce wraps up for lunch, do NOT assemble them beforehand. Bring your lettuce separately or store it in the same container with a paper towel between it and the chicken. Otherwise, you will end up with not-so-yummy, soggy wraps. (Yup, learned that the hard way.) Keep chicken in an airtight container in the fridge for up to 3 to 4 days.
To Freeze: Shredded chicken freezes beautifully for up to 4 to 5 months. The lettuce, on the other hand, should not be frozen.
