Air Fryer Roasted Potatoes are the perfect blend of tender and crispy and so full of flavor. Red potatoes are tossed in a lemon-garlic sauce then topped with Parmesan cheese before roasting them in the air fryer.
Cut small red potatoes into quarters, or larger potatoes into 1-inch chunks.
Add the oil, lemon juice, zest, garlic, salt, and black pepper to a large bowl. Whisk until well combined. Add the chopped potatoes and toss until well coated in the sauce.
Sprinkle in ¼ cup of the Parmesan cheese and toss until all of the potatoes are covered.
Add the potatoes to the preheated 400 degree air fryer and spread out in a single layer. It’s OK if a few of the potatoes overlap slightly. Cook for 14-15 minutes, flipping the potatoes halfway through cooking.
Serve the roasted potatoes with the remaining 2 tablespoons of Parmesan cheese and the chopped parsley. Enjoy!

Meal Prep and Storage
How to prep ahead of time: You can chop the potatoes and toss them with the oil mixture a day early, but be sure to keep them in the fridge.
How to store: Place leftover potatoes in an airtight container and keep in the fridge for up to 4 to 5 days.
How to freeze: Freeze leftovers in a freezer-safe container or Ziploc bag for up to 6 months.
How to reheat: Place potatoes back in the air fryer at 300℉ for 3 to 5 minutes or use the microwave.
