To test if a kiwi is ripe, gently squeeze it. There should be a slight give or softness. To ripen, store at room temperature. To speed up the process place in a paper bag along with a banana or apple.
Using a sharp knife, cut both ends of the kiwi. Place a spoon with a relatively sharp edge where the flesh of the kiwi meets the skin.
Keep the spoon in close contact with the skin of the kiwi as you rotate the fruit. You should end up with a cylinder of kiwi fruit and a round circle of peel that can be discarded.
Cut the kiwi in half widthwise.Place a spoon with a relatively sharp edge into the kiwi where the flesh meets the skin. Scoop out the kiwi.
Cut both ends of the kiwi. Starting at top, trim a piece of skin from the kiwi by cutting downward. Rotate kiwi & repeat.
Once peeled, cut into wedges, rounds or cubes. Serve by itself or with yogurt, oatmeal or fruit salad. Peeled & cut kiwi can be stored for 2-3 days in an airtight container in the refrigerator.
