Ingredients
The healthy ingredients you need to make this cucumber Greek salad recipe include:
- Cucumber. Be sure to get a seedless type, like an English cucumber or a small cocktail cucumber. If you use a seeded cucumber, remove the seeds first. Check out How to Cut a Cucumber
- Tomatoes. For the best results, choose grape tomatoes or cherry tomatoes, as these have the most flavor and are easiest to work with. Vine-ripened or Roma tomatoes can be used, but make sure you seed them before dicing. (Learn how to dice a tomato here!)
- Onion. A red onion balances the whole salad. You can use a yellow, sweet, or white onion if needed.
- Olives. Black olives are affordable and easy to use. Look for pitted, drained, and sliced at the grocery store to save time. For a different flavor, try Kalamata olives.
- Feta cheese. Crumbled feta cheese is so easy to throw on the salad. Or, you can buy a block and chop it yourself.
- Parsley. You really need fresh parsley; don’t sub in dried if you can help it. (Check out How to Chop Parsley and How to Store Parsley!)
- Oil. Choose a good extra virgin olive oil or avocado oil that you like the flavor of.
- Lemon. Fresh lemons add so much to this salad. Avoid bottled lemon juice and go for the real deal.
- Seasonings. Both dried oregano and garlic powder are used to round out the flavor of the dressing.
How to Make Greek Cucumber Salad
These are the steps to follow to make this easy Greek cucumber salad recipe:
Prep the Cucumbers
The first step is to slice the cucumbers. You can leave all of the skin on or peel some of it.
Use a sharp knife to trim both ends of the cucumber, then slice it in half down the middle long-ways.
Cut each half into ¼ inch slices.
Place all of the cucumber slices in a large mixing bowl and sprinkle with salt. Let the fresh vegetables sit for at least 15 minutes, or up to 30 minutes. This allows the excess water to seep out.
After they rest, use paper towels to dab off the water that comes out of the cucumbers.
Slice and Whisk
Use a sharp knife to slice the tomatoes and thinly slice the onion.
Then, chop the fresh parsley and slice the olives. If you bought a block of feta, crumble it, as well.
Set aside until you’re ready to combine the salad.
To make the dressing, place the oil, lemon juice, oregano, garlic powder, and sugar in a medium bowl.
Whisk the ingredients well.
Mix the Salad
Add the tomatoes, onion, olives, cheese, and parsley to the bowl with the dried cucumbers.
Drizzle the Greek dressing over the ingredients and toss until everything is coated.
You can either serve this salad immediately, or refrigerate for a few hours.
