For years I have been making these Roasted Sweet Potato Cubes by baking them in the oven for one of my go-to weeknight side dishes.

Recently, I discovered how much quicker it is to make Air Fryer Roasted Sweet Potatoes, instead. The cubes cook up in just 10 minutes!

And it’s so versatile. Simply change up the seasonings or even add fresh herbs or crumbled cheeses for an elegant flair.

Ingredients

The simple ingredients you need to make this Air Fryer Sweet Potato recipe include:

  • Sweet potatoes. You need about 2 large or 3 medium-sized potatoes, which comes out to around 1-½ lbs.  Choose whatever variety you like or that is at your local store.
  • Oil. Avocado oil has a high smoke-point and is perfect for air fryer recipes. Olive oil can work, as well.
  • Paprika. This ingredient gives a spicy essence to the potatoes. Opt for smoked paprika for an added kick.
  • Garlic powder. It is essential to the flavor of the dish. If you use garlic salt, be sure to adjust the amount of additional salt you add.

How to Make Air Fryer Sweet Potatoes

These are the steps to follow to make this Air Fryer Sweet Potato recipe:

Prepare the Potatoes

Wash and scrub the potatoes under running water to remove any dirt and debris from the outside. Even though you will peel them, you can still transfer bacteria to the flesh while removing the skins.

Use a vegetable peeler to carefully slice away the outside of each potato.

The size of the potato chunks is the key.  For crispier bites, cut them smaller.  For soft, tender sweet potato cubes, cut them a bit bigger! Whatever the case, you DO want to make sure you cut them all a similar size so they cook up evenly.

I personally recommend cutting the potatoes into 1-inch cubes.

Use a sharp knife and a cutting board to slice each potato into 1-inch wedges. Then dice each one into cubes.

Toss to Coat

Once you have perfectly-sized cubes, add them to a large bowl along with the oil. Gently toss until every piece is evenly coated.

Sprinkle with paprika, garlic powder, salt, and black pepper. Mix until the potatoes are well coated.

If you add the oil first, the spices stick beautifully to the potatoes.

Cook in Air Fryer

Preheat the air fryer to 400℉. Making sure the inside is nice and hot is important to get those crispy potato cubes.

Add the seasoned sweet potatoes to the air fryer basket and spread out in a single layer. You want the hot air to freely circulate and touch every side.

Cook for 10-12 minutes, tossing the basket halfway through cooking.

Serve immediately with a sprinkle of fresh parsley and enjoy!

  • To Prep-Ahead: You can cut the sweet potatoes the day before. Be sure to toss them with the oil and store in the fridge until you’re ready to cook.
  • To Store: Keep leftovers in an airtight container in the fridge for up to 4 to 5 days.
  • To Freeze: When wrapped tightly and kept in a freezer-safe bag, sweet potatoes will last for 9-12 months in the freezer.
  • To Reheat: To get the crispy texture back, pop them in a 350℉ air fryer for 5 minutes. You can also warm them up in the oven or microwave, but they might get soggy.
