This light and refreshing Watermelon Feta Salad with Mint recipe is the perfect quick and easy summer side dish! Serve this healthy cold salad at picnics, potlucks, and BBQs all season long!
Watermelon | Cucumber Feta Cheese | Red Onion Jalapeno | Olive Oil Lime Juice | Sweet Mint Salt and Pepper
Prepare watermelon by cutting into ½-inch cubes. Peel or partially peel cucumber and cut into ½-inch cubes.
Combine melon, cucumber, feta cheese, onion, pepper (optional), oil, lime juice, salt, and pepper in a large bowl.
Toss until ingredients are well combined. Mix in fresh mint if serving immediately.
If storing to serve later, reserve mint and add just before serving. Enjoy!
