Hey There! Welcome to Evolving Table!
I’m London, a Texas-born food lover who’s been sharing recipes on this site for over 10 years. What started as a passion project in my final year of dental school has grown into a full-time cooking adventure, with over 800 recipes designed to help answer the daily question: “What’s for dinner?”
It all started in a small town in Southeast Texas called Orange, right on the Louisiana border. That little town shaped my love for food in ways I never expected. Growing up at the crossroads of Cajun, Mexican, and Southern cuisines, I was surrounded by bold, vibrant flavors that still inspire my cooking today.
My path into the cooking world wasn’t exactly a straight line. Torn between my passion for cooking and the pursuit of a more “stable” career, I went to Texas A&M, majored in business management, and completed the requirements for dental school. All the while, secretly hoping I’d find my way back to the kitchen.
Then, just months before graduating with my D.D.S., I stumbled upon something called a food blog, and everything changed. It became the perfect outlet for my love of cooking, food photography, and storytelling. Seven years later, I retired my dental license, and began blogging full-time.
What you’ll find on the site
- Main dishes, sides, soups, salads, and sauces. Think of it as your resource for ALL the dinner dishes. (Plus a few holiday faves!)
- Whole foods-focused recipes. Made mostly from scratch, using wholesome ingredients.
- Tips and tricks to make it a winner. Simple ways to give your meals that extra OOMPH! of texture and flavor.
- Family-friendly recipes. Most dishes are picky palate-approved or can be easily tweaked to please everyone at the table.
What you won’t find on the site
- Nutritional guidance or fad diets. No weight loss tips or extreme diet trends here—just balanced, flavorful meals.
- Complicated culinary dishes. Forget the gazillion ingredients or hours in the kitchen. My recipes are simple and quick.
- Flavorless failures. Being a science nerd at heart, I love experimenting to make sure each recipe is just right. Every dish is tested multiple times before it goes live.
The most exciting chapter thus far.
But perhaps the most exciting chapter in this journey has been fulfilling my lifelong dream of creating a cookbook. Ever since I was 7 years old, piecing together construction paper with hand-drawn images, I knew that sharing my love for cooking in a book was my ultimate goal.
And now, with Weeknight Winners, that dream has become a reality. This cookbook is filled with my favorite easy, flavorful dinner recipes designed to help you turn everyday dinners into weeknight winners!
Where you can currently find me.
After living in Austin for over a decade, I still find myself experimenting in the kitchen almost every night of the week, hosting random potlucks, or running the trails with friends. And now, I get to do this alongside my favorite person in the world and true partner in life, Justin. He also LOVES cooking, too, so be sure to check out his recipes on the site here!
